Spelt Pumpkin Bread (Hildegard Inspired)
  • 1 ½ cups spelt flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 4 eggs
  • 1 cup white sugar
  • ¼ cup light brown sugar
  • ½ teaspoon vanilla extract
  • ¾ cup canned pumpkin
  • ¾ cup applesauce

Directions

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 8-1/2×4-1/2-inch loaf pan.
  • Mix flour, baking soda, nutmeg, cinnamon, cloves, baking powder, and salt together in a large bowl.
  • Beat eggs, white sugar, brown sugar, and vanilla extract in a separate large bowl until smooth. Stir in pumpkin and oil. Add spelt flour mixture. Mix until batter is blended and smooth.
  • Pour batter into the greased pan. Tap to get air bubbles out.
  • Bake in preheated oven until the top is dark brown and a toothpick (or knife) in the center comes out clean, about 75 minutes. Let cool in the pan, about 15 minutes. Transfer to a wire rack or serving plate. Slice as you like, and enjoy 🙂
